Delicious special meaty cuts of goat meat for your grilling pleasure! These are about 1/3 pound for a pair.
One pair equals one serving.
The trick with goat meat is to marinate it for at least an hour in the fridge. I typically grind some fresh garlic, herbs like rosemary and thyme, a dash of salt and pepper, and, more importantly, a squeeze of a whole lemon. The acid in the lemon will tenderize the meat.
You can go Asian style and marinate in soy sauce, ginger, smashed garlic and onion, a dash of cinnamon. I would still add the lemon. Prepare each style in a separate ziplock bag and impress your guests.
Then grill it at high heat. I would say about 4 minutes on the first side and 2 on the second. Check the internal temperature for 145F for rare and 155F for medium rare. When you get it off the grill, you can still rub some lemon on the meat, and it will be an extra special touch!
